Inside our
Williston brewery

The first Burlington Beer Co. batch came out of Williston in 2014. We’re still here, turning imaginative recipes into the beers you know and the ones you haven’t met yet.

Behind every brew day is a team following the beer from grain to glass.

Curiosity,
batch by batch

Our beers explore what familiar styles can become, from hazy IPAs and bright lagers to fruit-forward sours. Williston gives our brewers the space to turn those ideas into beer, whether they’re brewing a year-round favorite or something new.

The grain silo and mill supply the start of the process. Our 30-barrel brewhouse carries it forward, and the cellar is where fermentation develops the beer’s character. The team follows each batch along the way, using the tank cooling system to manage temperature as the beer takes shape.

Taste is a
team effort

Around the tasting table, our team pays attention to aroma, flavor, and how a beer feels and finishes. Tasting sits alongside measurements and lab work, helping us follow the character of each beer from one batch to the next.

The equipment supports that attention. Our centrifuge separates heavier yeast and hop sediment while keeping the haze we want in our IPAs. Different styles call for different settings, so the people running the process matter as much as the tools.

From our line
to your fridge

Packaging day brings the cellar and canning teams together. Beer moves onto our Wild Goose canning line, where the team checks fill weights and can seams. Carbonation and oxygen checks are part of the work, too.

The goal is simple: carry the beer we’ve cared for at the brewery into the can you open at home, or the pint you share with friends.

Room to grow

We started in May 2014 with a 15-barrel electric brewhouse and a first batch of C’est Bon! In 2018, we installed our 30-barrel brewhouse, grain silo, and canning line. More tanks, expanded cooling, a larger cold-storage space, and the centrifuge followed as the brewery grew.

In 2021, our taproom and restaurant opened on Flynn Avenue in Burlington. Williston remained the home of our production brewery.

Today, the two places give us room to do what we love: make imaginative beer and share it around a table.

Care beyond the beer

The work continues beyond brewing and packaging. We’re investing in wastewater pretreatment at Williston, where biological start-up is underway. A local hauler also carries our spent grain to local farms for animal feed.
